Coffee Chocolate Loaf Cake
A delight for coffee lovers and an amazing accompaniment with your tea or coffee. It tastes best when served warm.
This is my first post on this blog, so I’m very excited and very nervous at the same time. I had been planning to start a blog for quite some time but it materialized today. As many of you already know, I have a Facebook page by the same name
I’ve done many posts there, mainly desserts, cakes and bakes, which remain my first culinary love. I hope you like this post and the other posts which follow, I’m just starting to blog so there might be flaws and glitches, do forgive me and let me know how and where I need to improve.
On to the recipe, this loaf cake was specially made for my coffee loving niece, it is adapted from a recipe by the blog My Baking Addiction. Its an easy recipe which makes one cake or two loaves.
2 cups caster sugar
1/2 cup refined oil
2 tsp baking soda
1 tsp baking powder
1 cup strong black coffee(2 tsp instant coffee dissolved in a cup of hot water), cooled
2 tsp vanilla esssence
2 cups All purpose flour
1 cup buttermilk
Prepare two loaf pans by greasing and flouring them.
Pre heat oven at 180 degrees Celsius
In a large mixing bowl, mix all the ingredients, one by one, except the flour and buttermilk.(Please make sure the coffee has been cooled otherwise the eggs will get cooked)
Beat it well with a hand mixer till frothy and light.
Now add flour alternating with buttermilk in three additions and fold in lightly with a spatula.
Immediately pour the batter into loaf tins and put in the oven to bake.
Bake for 35 to 40 minutes or till done. To check for doneness, a skewer inserted in the middle of the cake comes out clean.
Enjoy the wonderful aroma while the cake bakes and the taste of the cake after its done.
