Chocolate chip muffins
Chocolate Chip Muffins.
These are small, individually baked goods which might be sweet or savory. They generally have flour, eggs and oil besides other ingredients.
The most commonly found and most loved muffins are chocolate chip muffins. These are tiny cakes with chocolate chips in it, easy and quick to bake and even quicker to disappear…gobbled down!
I am going to post a basic one bowl recipe, which will make around 12 large muffins. You can half the recipe if you want.
Muffins taste best when served warm, they are a good accompaniment to tea or coffee and great for formal English tea parties.
So here goes the recipe, do try and let me know how you like it.
100 gm refined oil/ butter
200 castor sugar
1 tsp vanilla essence/extract
150 gm all purpose flour
1 tsp baking powder
100 gms chocolate chips
40 ml milk
Preheat oven at 180 degrees,
Keep the paper cases ready in a muffin tray.
Sieve the flour with baking powder
In a bowl, beat the sugar and oil till mixed, then add the eggs and essence, mix and finally add in the flour and milk and fold in with a spatula till well Incorporated. Now add the chocolate chips and mix it some more, that’s it.
Pour into the cases till 3/4 full. Bake for 30 minutes or till done.
Note: My cases where big, so I baked for 30 minutes, if you use regular paper liners reduce the baking time.
