Crushed Hot Potatoes

The world is a beautiful place, with beautiful rivers, mountains and cities. There are so many things to be thankful about yet we take our lives and our bounties for granted. Very often, we forget all that we have and concentrate on what we don’t have, and keep cribbing about it. I read this book which had a great idea, it said, ” Each night before sleeping, count ten things for which you are grateful to God today.” It makes such a big difference, it has made me at peace and satisfied with my life. You don’t have to count big things, just small ones, that we often forget to even think about…and for me, one such thing is potato, yes, you read it rightπŸ˜€ Aloo…I love it, have always loved it, it’s so versatile and so humble, ‘adjusts’ so well with all kinds of veggies, more of a supporting actor every time.
But in this recipe, I wanted this hero to shine on its own. A simple, no fuss recipe, with few ingredients but high on taste and I love that crisp exterior the most.

6-7 small Potatoes
1-2 tablespoon mixed herbs(optional)
Olive oil as needed
Salt and pepper to taste
Juice of one lemon
Water to boil

Boil the Potatoes with their skin on, in salt water.
Once they are done, take your oven tray, smear it with olive oil.
Pre heat your oven at 225 degrees Celsius.
Put the Potatoes on the tray, a little apart.
Crush them with a masher or the back of a spoon with the skin on.
Sprinkle the herbs, salt and pepper.
You can add some chilli flakes also.
Sprinkle some oil on top also.
Bake for about 20 minutes on the highest level of you oven.
The potatoes should be lightly browned from the top and crisp from the bottom, it should be a little charred, bake more if required.
Take it out onto the serving dish, sprinkle some lemon juice, herbs, and salt.
Serve hot with green coriander chutney or sweet chilli sauce.
