Pizza Muffins

Pizzas are everyone’s favourite. I generally make pizza from scratch but it becomes quite an effort if you have hungry kids who want everything quickly. So in such situations, I make this batter and bake these muffins, altogether it takes about half an hour…the best part is they are so much like pizza in taste, after all, they are pizza muffins.
So you longer have to knead the dough and leave it to rise, you just have to put everything in, mix it well, pour into the muffin liners and bake.
Serve with pizza sauce. Or I make this concoction, I take some ketchup, add green chilli sauce and pizza seasoning, mix and heat for 20 seconds in a microwave. Voila! You have an amazing Pizza sauce ready in a jiffy.
So do try it, it’s another easy one. This recipe is good for about 12 regular size muffins.

Ingredients
1 cup All-purpose flour
1 tsp baking powder
1 small capsicum, finely chopped
1 tomato, finely chopped
1 cup grated mozzarella/pizza cheese
1 cup milk
1/2 tsp salt
1 egg lightly beaten
1 tbsp pizza seasoning with chilli flakes

Sauce
1/2 cup tomato ketchup
1 tbsp green chillies sauce
1 tsp pizza seasoning

Pre heat oven at 180 degrees Celsius.
Prepare the muffin moulds by putting liners.
Mix all the pizza muffin ingredients( except the sauces)
Mix till well incorporated
Pour into mould till half full.
Bake for 25 minutes or till done.

To prepare the sauce
Mix the sauces and pizza seasoning together.
Microwave for 25 to 30 seconds just before serving.
Mix again.

Serve the muffins with the sauce on top or alongside.

    Mam made it eggless but muffin got stuck to paper liner . please can u guide as to why this happened .

      It does stick a little to the muffin paper liner because of the cheese and otherwise low fat content. Trying to improve on this part of the recipe, will keep you posted. How did you find the taste?
