Easy Butter Cookies
I don’t generally make cookies because I find them too difficult to make and they get over in an instant. Kneading the dough, getting the hands dirty is just too much of an effort…. till I found this recipe, as good as icing a cake.😊😊
This is a basic butter cookie recipe which I have altered slightly to suit my taste buds, I tried two types of cookies, the first one filled with pineapple jam and the second one is plain.
There are a few ingredients, easily available, mixed together, filled into an icing bag and piped away. If you don’t have an icing bag, take and clean plastic bag which has a straight corner, snip off the corner with a pair of scissors and there you have your icing bag ready. Pipe into circles, fill jam or let it be as it is, bake and it’s ready in 10 minutes.
Voila!! It’s easy peasy as always.😎
100 gms butter
80 gms caster sugar
1 tsp vanilla essence
160 gms all purpose flour
Pre heat oven at 210 degrees Celsius. Line a baking tray with parchment paper. Keep your icing bag with the nozzle ready.
In a bowl,let the butter softened, (can microwave for 20 seconds), add to it, the sugar, egg and vanilla essence. Mix well. Now add the flour and mix till everything comes together.
Fill in the icing bag and pipe as many as you can, please ensure that the cookies are not very close to each other, else they will stick together and that won’t be a great sight.
For jam filled cookies, make a dent in the middle of the cookie and fill with a blob of any jam of your choice.
Bake for 10 minutes or till the edges start browning a little. Remove from oven, let it cool before dislodging the cookies. If the cookies are stuck to the paper then they need to be baked some more.
Cool completely before putting into airtight containers.
