Crisp Fried Okra (Bhindi)

Crisp Fried Okra (Bhindi)

Okra, Ladies Finger or Bhindi, a humble vegetable, it’s crisp fried version is simple to do and really good to taste. My kids eat Bhindi in this form only. You can give it your own twist, like adding achaar ka masala or omitting the chaat masala.
It is great as a side dish, I love it mixed with dal and chawal, very satisfying.
All you have to do is chop the okra like so.

Then mix all masalas with the besan and cornflour, coat the okra with dry masalas and deep fry in hot oil. Ta da….it’s done.

 

500 okra/ladies fingers
2 tbsp besan
2 tsp cornflour (heaped)
1 tsp red chilli powder
1 tsp chaat masala
1/2 tsp turmeric powder
Salt to taste
Oil to deep fry

Wash the okra, chop of the tips and cut into long slits.
In a container, mix all the other ingredients except oil.

Be careful with the salt, use lesser than required, because while deep frying the okra shrinks and becomes very salty.
Heat the oil in a wok or kadai.
Coat the okras with the masala mix.
Deep fry till golden brown.
Remove on an absorbent paper.
Serve hot with chapatis or dal- chawal.
