Healthy Stuffed Paneer

Paneer or cottage cheese is an all time favourite. It is a rich source of protein and calcium so is considered very healthy.
The paneer is sliced into squares, filled with green chutney and rolled in a spicy curd marinade, then it is grilled either in a grill machine or on a stove top.
It can be served as tikkas along with tomato and capsicum squares or can be enjoyed on their own.
They can be served as a snack, side dish or starters. Really versatile, really good. And as most of my recipes are, easy to put together.
The best part is there is hardly any oil or carbs in this recipe.

For the filling
2 handfuls of spinach leaves
2 green chillies
1 handful on coriander leaves
1tbsp of curds
Salt to taste

For the Marinade
2 tbsp curds
1 tsp red chilli powder
1 tsp cumin
1/2 tsp turmeric powder
1/2 tsp garam masala
2 tbsp cornflour
1 tsp ginger garlic paste
Salt to taste

400 gms Fresh Paneer
Chat masala
Juice of a lemon
1-2 tsp oil

We begin with the filling
Put all ingredients in a mixer and make a paste.
Keep aside.

In another bowl, mix all the ingredients for the marinade and mix well. Adjust seasoning if required.
Keep aside.

Chop the Paneer into equal sized thick square pieces.
Slice them horizontally so you have two similar sized paneer slices.
Fill the slices of paneer with the prepared filling.
Roll the paneer sandwiches in the marinade.
Repeat for all the Paneer slices.
Put a little oil on your griller.
Grill till you get a nice colour.
The Stuffed Grilled Paneer is ready.
Serve hot with a dash of lemon juice and chaat masala.
