A traditional Scottish cake with lots of dried berries, orange peel and almonds.
This cake is lighter than a traditional Christmas cake although it is rich in content and in taste. It is free from alcohol as well, quicker to make as no soaking is required at the same time, it tastes great.
The orange peel and orange essence give it a fresh citrusy edge, which will be loved by all fruit lovers. It’s easier to make as well. So go on, don your aprons and get baking.

150 gms Butter,softened or refined oil
150 gms caster sugar
225 gm All purpose flour
1.5 tsp baking powder
125 gms dried berries
125 gms raisins
50 gms orange peel
1 tsp orange essence
100 gms almonds
1 tbsp milk
Take some boiling water and soak the almonds in it for about 10 minutes.
Peel the almond skin.
Roughly chop half of the almonds.
Pre heat the oven at 150 degrees Celsius.
Prepare an 8 inch tin by greasing and lining it with butter paper.
In a large bowl, beat the butter/oil and sugar, till light and fluffy.
Add the eggs and essence, beat some more.
Add the flour and baking powder, mix with a spatula till well incorporated.
Now add the raisins, berries, orange peel and the chopped almonds.
Add the milk.
Pour into the prepared tin.
Top with the remaining almonds.
Bake on the middle rack for 2 hours or till done.
