Makhane ki Kheer
Makhana or Fox nut are these really healthy forms of nuts which are high in antioxidants and helpful in controlling blood pressure. They are actually tasteless so can be added to savoury as well as sweets.
I tried out the Kheer and it turned out really good. It was creamy, rich and sweet. It was relished by the whole family alike which is a rarity since we have people of all age groups who hardly ever agree on one dish.
I have adapted this recipe from Milkmaid.
The recipe is an easy one with just a few Ingredients. So let’s get down to the ingredients.
3 cups Makhana/ Fox nuts
6 cups full cream milk
1/2 cup grated coconut
1 cup condensed milk
2 tsp desi ghee
Silvered almonds and saffron strands to garnish
Put the milk on low flame.
In a large kadhai, put the ghee and roast the makhana till it turns crunchy.
Remove from kadhai and let it cool.
In the same kadhai, roast the grated coconut, lightly.
Now, grind the makhana coarsely.
Add it into the milk and keep stirring for about 5 minutes. Keep the flame on medium high.
Now add the grated coconut also.
Stir for another 5 minutes.
Finally add the condensed milk and half of the saffron strands.
Keep stirring till the Kheer thickens to your liking. It will take around 10 to 15 minutes.
Remove from fire and pour into the serving bowl.
Garnish with slivered almonds and saffron strands.
I like to have it hot but a lot of people like it cold, so serve according to your preference.
Note- You can omit the condensed milk and use regular sugar, add according to your taste, but the Kheer will not be as rich as with condensed milk.
