Chocolate Ragi Cupcakes
Ragi is one the healthiest cereals, it has high protein content, it is good for diabetics, it has anti cancer and anti microbial properties.
Cupcakes are generally considered not so healthy but I have tried to incorporate some healthy ingredients in it without compromising on the taste. The cupcakes taste as good or even better than their looks. They are easy and quick to do, so what are you waiting for, let’s begin with the ingredients.
Chocolate Ragi cupcakes with hazelnuts
100 ml refined oil
100 gm brown sugar
1 tsp vanilla essence
40 gm all purpose flour
40 gm ragi flour
20 gm cocoa powder
1 tsp baking powder
40 ml milk
25 gms roasted and chopped hazelnuts
Preheat oven to 180 degrees
Line the cupcake tray with liners.
In a large bowl beat sugar and oil together.
Add the eggs and essence and beat till frothy.
Now add both the flours, cocoa powder and milk.
Mix lightly with a spatula.
Add half the hazelnuts. Mix some more.
Pour into liners and top with the rest of the nuts.
Bake for 25 minutes.
Note- I have used lightly roasted hazelnuts but you can use any nut of your choice, walnuts will be a great option.
